Tricolor Rotini with Caramelized Onion Chicken Sausage and Shrimp in Cream Sauce

I discovered this Caramelized Onion Chicken Sausage with 9-month Aged White Cheddar in Costco. I love the taste and have been experimenting with it in different dishes. As you can see in the picture, when you slice it, the cheese is literally oozing out. It’s versatile so I have used it for breakfast, lunch and dinner.

I had shrimp in my freezer I needed to cook so I decided to combine the two in a cream sauce with tricolor rotini. I sliced and sautéed orange and red peppers in the pan with the sausage. The shrimp were seasoned and sautéed separately.  I bought some fresh curly parsley and chopped it up to sprinkle on top of the pasta.

Whenever I need a good sauce, I call on my son, Gabe. He is a master at making Alfredo sauce along with a variety of cream based sauces. For this dish he combined all the ingredients in the pan, added heavy cream, butter and parmesan cheese. He added some seasonings to the pan as well but I did not catch all of his “secret” ingredients. He simmered it and let it reduce and thicken. Once it reached the desired consistency, he plated the pasta and spooned the sauce over it and added the parsley as the finishing touch.

I watch him make sauces all the time but mine just don’t come out as good as his. Two thumbs up Gabe! This was as good as it looks. I didn’t need to add anything additional to it. It had an ample amount of chicken sausage and shrimp and it was “seasoned 2 perfection”!
