I love sweets! Generally I would gladly choose a really good dessert over an entrée if I had to pick one. For me, nothing ends the day better than a good meal, followed by a great dessert and a cup of coffee, preferably blueberry.
I love anything chocolate for dessert but when chocolate is not an option, Pineapple Upside-Down cake is an excellent substitution. I had diced mangos in my pantry so I thought it would be delicious to combine the flavor of the mangos with the pineapples. I happened to have some Hawaiian Mango Sugar left from a previous trip to Hawaii so I thought this would be the perfect time to use it. I caramelized the pineapples and mangos in the Hawaiian Mango Sugar to add a unique flavor to the cake. I must say this turned out better than expected! I enjoyed it so much I added this to the dessert menu for my family dinner on Mother’s Day. The second time around I remembered to add the cherries!
